Shrimp and Pineapple Skewers
Makes 12
Ingredients
- 12 wooden skewers
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons local honey
- 3 tablespoons rice vinegar
- 1 pound large shrimp, peeled and deveined
- ½ pineapple, cut into ½-inch cubes
- 1 pound white mushrooms, halved
- 1 red onion, cut into 1-inch pieces
- 2 tablespoons canola oil
- Salt and ground black pepper, to taste
Instructions
- Preheat grill to medium-high heat. Soak all skewers in water for 20 minutes.
- Whisk together soy sauce, honey, and vinegar and set aside.
- Thread shrimp, pineapple, mushrooms, and red onion onto skewers. On both sides of skewer, brush with canola oil and sprinkle with salt and pepper.
- Grill until shrimp turn opaque, about 3 to 4 minutes and brush with soy sauce mixture. Flip and brush with sauce again. Grill until shrimp turn opaque and vegetables are lightly charred, 3 to 4 minutes.
