Candied pecans add a sweet crunch to this chicken salad. We served it on pitas, but you could also spread it on sandwiches or crackers.
Praline Chicken Salad Pitas
Makes 4 servings
Ingredients
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon kosher salt
- 3 cups finely chopped rotisserie chicken
- ½ cup diced celery
- ¼ cup chopped green onion
- 1 cup candied pecans, chopped
- 4 white pitas
- Garnish: lettuce, tomato slices
Instructions
- In a medium bowl, whisk together mayonnaise, mustard, lemon juice, and salt until well combined.
- In a large bowl, toss together chicken, celery, and green onion. Add mayonnaise mixture, stirring until combined. Cover and refrigerate for 30 minutes.
- Fold pecans into chicken mixture. Place ½ cup chicken mixture on each pita; garnish with lettuce and tomato, if desired, and fold in half. Serve immediately.
