Mirliton Salad

This salad is full of color and crunch.

Mirliton Salad
 
Makes 4 Servings
Ingredients
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 teaspoons whole-grain mustard
  • ½ teaspoon honey
  • ¼ teaspoon crushed red pepper
  • 2 mirlitons, seeded and julienned (about 4 cups)
  • 1 Asian pear, cored and julienned (about 2 cups)
  • 1 small apple, cored and julienned (about 2 cups)
  • 1 cup thinly sliced red onion
  • 1 cup shredded carrot
  • 1 red bell pepper, thinly sliced (about 1 cup)
  • 1 yellow bell pepper, thinly sliced (about 1 cup)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • Garnish: fresh cilantro leaves
Instructions
  1. In a large bowl, combine vinegar, oil, salt, mustard, honey, and crushed red pepper. Stir in mirliton, pear, apple, onion, carrot, bell peppers, parsley, and cilantro until combined. Garnish with cilantro, if desired.
