Melting Sweet Potatoes
Makes 4 to 6 Servings
Ingredients
- 2 tablespoons vegetable oil
- 4 medium sweet potatoes, peeled and cut into 1-inch slices
- 1 cup beef broth
- 2 tablespoons minced shallot
- 2 cloves garlic, minced
- ¾ cup unsalted butter, cubed
- 1 tablespoon Cajun seasoning*
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
Instructions
- Preheat oven to 400°.
- In a 12-inch cast-iron skillet, heat oil over medium-high heat. Place sweet potato slices in a single layer in oil. Cook until browned, 3 to 4 minutes per side.
- In a small bowl, stir together broth, shallot, and garlic, and pour over sweet potatoes. Sprinkle butter and Cajun seasoning on top. Top with thyme and rosemary.
- Bake until tender, about 30 minutes.
