Melting Sweet Potatoes
 
Makes 4 to 6 Servings
Ingredients
  • 2 tablespoons vegetable oil
  • 4 medium sweet potatoes, peeled and cut into 1-inch slices
  • 1 cup beef broth
  • 2 tablespoons minced shallot
  • 2 cloves garlic, minced
  • ¾ cup unsalted butter, cubed
  • 1 tablespoon Cajun seasoning*
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
Instructions
  1. Preheat oven to 400°.
  2. In a 12-inch cast-iron skillet, heat oil over medium-high heat. Place sweet potato slices in a single layer in oil. Cook until browned, 3 to 4 minutes per side.
  3. In a small bowl, stir together broth, shallot, and garlic, and pour over sweet potatoes. Sprinkle butter and Cajun seasoning on top. Top with thyme and rosemary.
  4. Bake until tender, about 30 minutes.

*We used Slap Ya Mama Original Blend Cajun Seasoning.
