Green Onion Popovers

Ingredients
- 3 tablespoons unsalted butter, melted and divided
- 2 cups whole milk, room temperature
- 4 large eggs, room temperature
- 2 tablespoons finely chopped green onion
- 2 cups all-purpose flour
- 1 teaspoon kosher salt
- ¼ teaspoon Creole seasoning
Instructions
- Position oven rack in bottom third of oven. Preheat oven to 400°.
- Brush wells of a 12-cup muffin pan with 1 tablespoon melted butter.
- In a large bowl, whisk together milk, eggs, and green onion. Whisk in flour, salt, and Creole seasoning until smooth. Whisk in remaining 2 tablespoons melted butter just until combined. Divide batter among prepared wells, filling to ¼ inch from the top.
- Bake until puffed and crisp, 30 to 35 minutes. (Do not open oven during baking.) Serve immediately.
