These Boucanière Burgers recipe combines ground pork, smoked sausage, and smoky provolone with a tangy Creole sauce for a bold Louisiana-style burger.
Boucanière Burgers
Makes 4
Ingredients
PATTIES
- 1 pound ground pork
- ½ pound sliced smoked sausage
- 2 cloves garlic, grated
- 1 teaspoon Cajun seasoning
SAUCE
- 1 cup mayonnaise
- ⅓ cup chopped sweet hot pickles
- 3 tablespoons Creole mustard
- 1 green onion, finely chopped
- 1 tablespoon smoked paprika
- 1 tablespoon hot sauce
- 1 (6-ounce) package sliced smoked provolone cheese (8 slices)
- 4 hamburger buns, toasted
- Pickle slices
- Potato chips, to serve
Instructions
- For patties: In the work bowl of a food processor, pulse meats, garlic, and Cajun seasoning until combined. Shape mixture into 8 (3-ounce) balls.
- For sauce: In a small bowl, combine mayonnaise, chopped pickles, mustard, green onion, paprika, and hot sauce.
- Heat a griddle pan over medium-high heat. Place meatballs on pan, and smash with a large spatula until very thin. Cook for 2 to 3 minutes per side. Top each patty with 1 slice of cheese. Cook until cheese is melted, about 30 seconds.
- Place 2 patties on bottom half of each bun. Top each burger with sauce, pickle slices, and top of bun. Serve with chips.
