These Country Green Beans simmer smoky bacon, tender haricot verts, potatoes, and fresh corn in savory broth for a comforting Southern side full of flavor.
Country Green Beans
Makes 6 servings
Ingredients
- 6 slices thick-cut smoked bacon, cut into bite-sizes pieces
- 2 pounds whole haricot verts, stems trimmed off
- 1 cup chopped yellow onions
- ½ pound small red new potatoes, cut in half (leave skins on)
- 6 ears yellow corn on cob, cut off cob, scraping “milk” off cob
- 2 cups chicken broth
- Salt and pepper, to taste (don’t add much salt, due to the fact the bacon is already salty)
Instructions
- Render bacon in a 4-quart thick-bottomed pot on low to medium heat until cooked thoroughly but not crisp. Remove from pot.
- Add green beans and onions, and sauté on low to medium heat until soft.
- Add potatoes, bacon, and corn and stir until well incorporated.
- Add chicken broth and turn up heat until the pot is gently boiling. Stir. Let simmer for 1 hour. Add salt and pepper, to taste.
Katie’s Tip: Do not drain the “bean liquor”; sometimes we put a piece of white bread in a bowl and pour the beans with juice over it.
