Bacon-Wrapped Spiced Figs

Ingredients
- 12 slices center-cut bacon
- ½ teaspoon ground coriander
- ½ teaspoon ground cumin
- ¼ teaspoon kosher salt
- ¼ teaspoon ground cinnamon
- ¼ teaspoon cayenne pepper
- 12 large fresh figs
- 1 tablespoon olive oil
Instructions
- Preheat oven to 425°.
- Heat a 12-inch cast-iron skillet over medium heat. Working in batches, cook bacon until slices start to curl and brown slightly, 2 to 3 minutes per side. (Do not cook until crisp.) Remove bacon, and let drain on paper towels, reserving drippings in skillet.
- In a small bowl, stir together coriander, cumin, salt, cinnamon, and cayenne.
- In a large bowl, toss together figs and oil to coat. Sprinkle spice mixture onto figs, tossing to coat. Wrap 1 slice bacon around each fig, securing ends with wooden picks. Place in skillet.
- Bake until bacon is browned and crisp on edges, about 15 minutes. Remove wooden picks, and serve immediately.
