Shrimp and Pineapple Skewers

Shrimp and Pineapple Skewers

Ingredients
  • 12 wooden skewers
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons local honey
  • 3 tablespoons rice vinegar
  • 1 pound large shrimp, peeled and deveined
  • ½ pineapple, cut into ½-inch cubes
  • 1 pound white mushrooms, halved
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons canola oil
  • Salt and ground black pepper, to taste
Instructions
  1. Preheat grill to medium-high heat. Soak all skewers in water for 20 minutes.
  2. Whisk together soy sauce, honey, and vinegar and set aside.
  3. Thread shrimp, pineapple, mushrooms, and red onion onto skewers. On both sides of skewer, brush with canola oil and sprinkle with salt and pepper.
  4. Grill until shrimp turn opaque, about 3 to 4 minutes and brush with soy sauce mixture. Flip and brush with sauce again. Grill until shrimp turn opaque and vegetables are lightly charred, 3 to 4 minutes.
