Praline Chicken Salad Pitas

Candied pecans add a sweet crunch to this chicken salad. We served it on pitas, but you could also spread it on sandwiches or crackers. 

Praline Chicken Salad Pitas
 
Makes 4 servings
Ingredients
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • 3 cups finely chopped rotisserie chicken
  • ½ cup diced celery
  • ¼ cup chopped green onion
  • 1 cup candied pecans, chopped
  • 4 white pitas
  • Garnish: lettuce, tomato slices
Instructions
  1. In a medium bowl, whisk together mayonnaise, mustard, lemon juice, and salt until well combined.
  2. In a large bowl, toss together chicken, celery, and green onion. Add mayonnaise mixture, stirring until combined. Cover and refrigerate for 30 minutes.
  3. Fold pecans into chicken mixture. Place ½ cup chicken mixture on each pita; garnish with lettuce and tomato, if desired, and fold in half. Serve immediately.
