Tony’s Winter Citrus Salad
Ingredients
- For the Salad:
- 1 Blood Orange, Peeled and Cut into Circles
- 1 Grapefruit, Peeled and Cut into Circles
- 1 Navel Orange, Peeled and Cut into Circles
- 1 Watermelon Radish, Thinly Sliced
- 2 Tablespoons Red Onion, Thinly Sliced
- 1 Cup Shredded Leftover Turkey
- 2 Ounces Goat Cheese
- Pistachios, Salted and Roasted, to Taste
- Tony’s Original Creole Seasoning, to Taste
- Citrus-honey Vinaigrette, or Your Favorite Store-bought Vinaigrette
- For the Citrus Honey Vinaigrette:
- 1 Clove Garlic, Grated
- ¼ Cup Fresh Orange Juice
- 2 Tablespoons Lime Juice
- 2 Tablespoons Lemon Juice
- 3 Tablespoons Honey
- ½ Cup Olive Oil
Instructions
- For the Salad:
- On large platter, assemble citrus circles.
- Add remaining ingredients in layers for serving.
- Before serving, dress with Citrus Honey Vinaigrette or salad dressing of choice.
- For the Citrus Honey Vinaigrette:
- In a mason jar, combine all ingredients and shake well.
