Creamy, cheesy, and full of comforting flavor, this Spinach Bake turns simple ingredients into a crowd-pleasing side dish. Tender spinach, sautéed vegetables, and a rich blend of cream cheese and sour cream come together under a golden layer of melted cheese.
Spinach Bake
Makes 6 servings
Ingredients
- 2 (10-ounce) packages of frozen chopped spinach, thawed
- 4 tablespoons butter
- 1 cup chopped onions
- 1 cup chopped celery
- Salt, cayenne pepper, and garlic powder, to taste
- 8 ounces cream cheese, softened
- 1 pint sour cream
- 1 cup canned sliced mushrooms, drained
- Grated white Cheddar or mozzarella cheese
- Garnish: paprika
Instructions
- Preheat oven to 350°. Lightly butter a 1½-quart baking dish.
- Cook spinach according to package directions and drain well.
- In a large skillet, melt butter over medium heat. Add onion and celery; cook, stirring occasionally, until tender, about 5 minutes. Season with salt, cayenne pepper, and garlic powder.
- Add cream cheese and sour cream to skillet and stir with a fork to combine with the vegetables.
- Add mushrooms and spinach to the skillet, stirring until blended. Spoon mixture into prepared dish. Sprinkle with cheese and bake until hot and bubbly and cheese is melted, about 15 to 20 minutes. Garnish with paprika, if desired.
