Herbed Shrimp Dip

Guests will clammer for this easy dip.

Herbed Shrimp Dip
 
Makes 6 to 8 Servings
Ingredients
  • 1 pound large fresh shrimp, peeled and deveined
  • 5 tablespoons extra-virgin olive oil, divided
  • 2 teaspoons Cajun seasoning*, divided
  • 1 thin French baguette, cut into ¼-inch slices
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons finely chopped fresh chives
  • 2 tablespoons finely chopped fresh parsley
  • ¼ teaspoon ground black pepper
Instructions
  1. Pat shrimp dry. In a large bowl, toss together shrimp, 1 tablespoon oil, and 1 teaspoon Cajun seasoning. Let stand for 10 to 20 minutes.
  2. Preheat oven to 425°.
  3. On a baking sheet, place baguette slices. Brush tops with 2 tablespoons oil.
  4. Bake until golden and toasted, 8 to 10 minutes.
  5. Heat a 10-inch cast-iron grill pan over high heat.
  6. Add shrimp to pan in batches, and cook for 2 to 3 minutes per side.
  7. In another large bowl, whisk together vinegar, chives, parsley, pepper, and remaining 2 tablespoons oil.
  8. Chop grilled shrimp into ¼-inch pieces; add to vinegar mixture, tossing to coat. Serve with crostini.
Notes
*We used Slap Ya Mama Original Cajun Seasoning.
