Oysters nestle in a garlicky dressing, crowned with crispy bacon bits, in this hearty, soul-warming dish.
Grand-Mere’s Oyster Dressing
Ingredients
- ½ pound thick-cut bacon,
- sliced into ¼-inch pieces
- 1 cup sliced yellow onion
- 1 cup sliced celery
- 1 cup chopped red bell pepper
- 1 cup chopped green bell pepper
- 1 cup sliced green onion
- 1 tablespoon minced garlic
- 1 pound ground beef*
- 3 cups chopped oysters (about 1-inch pieces)
- 4 teaspoons Cajun seasoning, divided
- 4 cups beef broth
- 5 large eggs, beaten
- 10 cups lightly packed torn stale French bread
- Garnish: sliced green onion
Instructions
- Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.
- In a large saucepan, cook bacon over medium heat, stirring occasionally, until golden brown and crispy, 10 to 12 minutes. Remove bacon using a slotted spoon, and let drain on paper towels, reserving 2 tablespoons drippings in pan.
- Add yellow onion, celery, bell peppers, green onion, and garlic to drippings, and cook over medium heat, stirring occasionally, until softened and lightly caramelized, 12 to 15 minutes.
- Add beef to vegetable mixture, and cook, stirring and breaking meat up with a spoon, until crumbly and lightly browned, 10 to 12 minutes. Remove from heat, and stir in oysters and 2 teaspoons Cajun seasoning.
- In a large bowl, whisk together broth, eggs, and remaining 2 teaspoons Cajun seasoning. Stir in oyster mixture, bread, and bacon (reserve some bacon for garnish, if desired). Transfer to prepared pan.
- Bake until golden brown, 45 minutes to 1 hour, covering with foil to prevent excess browning, if necessary. Garnish with green onion and reserved bacon, if desired.
