Fresh, colorful, and full of bright flavor, these Festive Fruit Cups combine pears, oranges, kiwis, and pomegranate arils with a zesty lime syrup for a refreshing holiday treat. 

Festive Fruit Cups
 
Makes 4 servings
Ingredients
  • ¼ cup sugar
  • ¼ cup water
  • 1 tablespoon lime zest
  • 3 medium red or green pears, peeled, cored, and diced
  • 1 tablespoon fresh lime juice
  • 2 cups orange segments (about 8 oranges)
  • 3 medium kiwis, peeled and chopped
  • 1 cup pomegranate arils
  • Garnish: fresh mint leaves
Instructions
  1. In a small saucepan, stir together sugar and ¼ cup water. Bring to a boil, stirring frequently, over medium heat. Remove from heat, and stir in lime zest. Let cool completely.
  2. In a large bowl, toss together pears and lime juice.
  3. In desired serving cups, layer orange segments, kiwis, pears, and pomegranate arils. Spoon simple syrup onto fruit mixture, and garnish with mint leaves, if desired. Serve immediately.
