Fresh, colorful, and full of bright flavor, these Festive Fruit Cups combine pears, oranges, kiwis, and pomegranate arils with a zesty lime syrup for a refreshing holiday treat.
Festive Fruit Cups
Makes 4 servings
Ingredients
- ¼ cup sugar
- ¼ cup water
- 1 tablespoon lime zest
- 3 medium red or green pears, peeled, cored, and diced
- 1 tablespoon fresh lime juice
- 2 cups orange segments (about 8 oranges)
- 3 medium kiwis, peeled and chopped
- 1 cup pomegranate arils
- Garnish: fresh mint leaves
Instructions
- In a small saucepan, stir together sugar and ¼ cup water. Bring to a boil, stirring frequently, over medium heat. Remove from heat, and stir in lime zest. Let cool completely.
- In a large bowl, toss together pears and lime juice.
- In desired serving cups, layer orange segments, kiwis, pears, and pomegranate arils. Spoon simple syrup onto fruit mixture, and garnish with mint leaves, if desired. Serve immediately.
