Crawfish Pie
Makes 1 (9-inch) pie
Ingredients
- ½ cup unsalted butter
- 5 plum tomatoes, seeded and chopped
- ½ cup chopped green bell pepper
- ½ cup chopped celery
- ½ cup thinly sliced green onion
- ½ cup chopped yellow onion
- ½ cup chopped fresh parsley
- 1½ teaspoons kosher salt
- 1 teaspoon ground black pepper
- ½ teaspoon cayenne pepper
- ¼ cup all-purpose flour, plus more for dusting
- 1 (16-ounce) package cooked crawfish tails, rinsed and drained
- Paprika Buttermilk Piecrust (recipe on page 95)
- 1 large egg
- 1 tablespoon water
- Garnish: boiled crawfish
Instructions
- Preheat oven to 400°.
- In a large skillet, melt butter over medium heat. Add tomatoes, bell pepper, celery, green onion, yellow onion, parsley, salt, black pepper, and cayenne; cook, stirring occasionally, until tender, 4 to5 minutes. Sprinkle with flour; cook, stirring frequently, until thickened. Stir in crawfish tails. Remove from heat; let cool for 20 minutes.
- On a lightly floured surface, roll half of Paprika Buttermilk Piecrust into a 12-inch circle. Transfer to a 9-inch pie dish, gently pressing into bottom and up sides. Trim excess dough to 1 inch beyond edge of dish. Spoon filling into prepared crust.
- On a lightly floured surface, roll remaining piecrust into a 12-inch circle. Cut dough into 1-inch strips. Arrange strips in a lattice design over filling. Trim excess dough. Fold edges under, and crimp as desired. Freeze for 10 minutes.
- In a small bowl, whisk together egg and 1 tablespoon water. Brush egg wash onto dough.
- Bake for 15 minutes. Reduce oven temperature to 375°, and bake until crust is golden brown, about 35 minutes more, covering with foil to prevent excess browning, if necessary. Garnish with boiled crawfish, if desired. Serve hot.
