Cajun Fried Rice

Cajun Fried Rice
 
Makes 6 servings
Ingredients
  • 2 pounds peeled and deveined medium fresh shrimp
  • 1 tablespoon Cajun seasoning
  • 1 (12-ounce) package andouille sausage, sliced crosswise
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped
  • 1 tablespoon vegetable oil
  • 6 cups cooked long-grain white rice
  • 1 (12-ounce) bag frozen mixed vegetables, thawed
  • 3 large eggs, scrambled and chopped
  • ¼ cup soy sauce
  • ¼ cup mayonnaise
  • 1 tablespoon hot sauce
  • Garnish: sliced green onion
Instructions
  1. Pat shrimp dry. In a medium bowl, toss together shrimp and Cajun seasoning. Refrigerate for 1 hour.
  2. In a Dutch oven, cook andouille and yellow onion over medium heat, stirring occasionally, until golden brown, about 10 minutes.
  3. Add garlic to andouille mixture, and cook, stirring constantly, for 1 minute. Remove andouille mixture using a slotted spoon, and let drain on paper towels.
  4. In same pot, cook shrimp over medium heat until pink and firm, about 1 minute per side. Remove shrimp from pot.
  5. In same pot, heat oil over medium-high heat. Add rice, and cook, stirring frequently, for about 3 minutes. Add mixed vegetables, and cook, stirring constantly, for 2 minutes. Stir in andouille mixture, eggs, and soy sauce.
  6. In a small bowl, combine mayonnaise and hot sauce. Drizzle servings with mayonnaise mixture, and garnish with green onion, if desired.
