Cajun Fried Rice
Makes 6 servings
Ingredients
- 2 pounds peeled and deveined medium fresh shrimp
- 1 tablespoon Cajun seasoning
- 1 (12-ounce) package andouille sausage, sliced crosswise
- 1 cup chopped yellow onion
- 2 cloves garlic, chopped
- 1 tablespoon vegetable oil
- 6 cups cooked long-grain white rice
- 1 (12-ounce) bag frozen mixed vegetables, thawed
- 3 large eggs, scrambled and chopped
- ¼ cup soy sauce
- ¼ cup mayonnaise
- 1 tablespoon hot sauce
- Garnish: sliced green onion
Instructions
- Pat shrimp dry. In a medium bowl, toss together shrimp and Cajun seasoning. Refrigerate for 1 hour.
- In a Dutch oven, cook andouille and yellow onion over medium heat, stirring occasionally, until golden brown, about 10 minutes.
- Add garlic to andouille mixture, and cook, stirring constantly, for 1 minute. Remove andouille mixture using a slotted spoon, and let drain on paper towels.
- In same pot, cook shrimp over medium heat until pink and firm, about 1 minute per side. Remove shrimp from pot.
- In same pot, heat oil over medium-high heat. Add rice, and cook, stirring frequently, for about 3 minutes. Add mixed vegetables, and cook, stirring constantly, for 2 minutes. Stir in andouille mixture, eggs, and soy sauce.
- In a small bowl, combine mayonnaise and hot sauce. Drizzle servings with mayonnaise mixture, and garnish with green onion, if desired.
