Be Our Guest, Mr. Collins Cocktail
 
Makes 1 serving
Ingredients
  • 1½ ounces gin*
  • ¾ ounce pineapple gum syrup*
  • ¾ ounce fresh lemon juice
  • 1 barspoon absinthe
  • Club soda
  • 4 to 6 dashes aromatic bitters*
  • Garnish: edible flowers
Instructions
  1. In a cocktail shaker, add gin, pineapple syrup, lemon juice, and absinthe; shake and strain into a collins glass mostly filled with crushed ice. Top with a splash of soda and more ice. Top with bitters, and garnish with flowers, if desired. Cheers!

*I prefer Gunpowder Irish Gin, Liber & Co. Pineapple Gum Syrup, and Peychaud’s Bitters.
