These festive Alligator Cookies bring a touch of Louisiana charm to the holiday season. Dipped in green candy coating and sprinkled with sparkling sugar, each peanut butter cookie “gator” gets decked out with candy eyes and snowy white “teeth.”

Alligator Cookies

Makes 24
Ingredients
  • 1 (12-ounce) bag green candy melting wafers*
  • 2 tablespoons all-vegetable shortening
  • Green sanding sugar, for dipping
  • 24 peanut butter-filled peanut- shaped sandwich cookies*
  • 48 small candy eyes White jimmies
Instructions
  1. In a medium microwave-safe bowl, melt candy wafers according to package instructions. Stir in shortening until melted and mixture is smooth.
  2. In shallow dish, pour sanding sugar.
  3. Dip 1 cookie into candy wafers mixture deep enough to cover sides of cookies, tapping on sides of bowl to remove excess. Immediately dip in sanding sugar, keeping one end (mouth) free of sugar so jimmies (teeth) will stick. Working quickly, use a small dot of candy wafers mixture to adhere candy eyes on top. Place jimmies around sides of mouth area to look like teeth. Repeat with remaining cookies. Let stand until candy wafers mixture is set. Store in an airtight container for up to 1 week.
Notes
*We used Wilton Dark Green Candy Melts and Nutter Butter peanut butter sandwich cookies.
