Be Our Guest, Mr. Collins Cocktail
Makes 1 serving
Ingredients
- 1½ ounces gin*
- ¾ ounce pineapple gum syrup*
- ¾ ounce fresh lemon juice
- 1 barspoon absinthe
- Club soda
- 4 to 6 dashes aromatic bitters*
- Garnish: edible flowers
Instructions
- In a cocktail shaker, add gin, pineapple syrup, lemon juice, and absinthe; shake and strain into a collins glass mostly filled with crushed ice. Top with a splash of soda and more ice. Top with bitters, and garnish with flowers, if desired. Cheers!
*I prefer Gunpowder Irish Gin, Liber & Co. Pineapple Gum Syrup, and Peychaud’s Bitters.
