This Sweet Potato Hash is a hearty, flavor-packed side dish perfect for any brunch or weeknight dinner. Roasted sweet potatoes, crisp bacon, and colorful bell peppers come together with smoky paprika and zesty seasoning for a satisfying dish with great texture and bold, savory flavor. It’s finished with fresh parsley for a bright, herbaceous touch.
Sweet Potato Hash
Makes about 6 servings
Ingredients
- 5 slices thick-cut bacon, chopped
- 2 pounds sweet potatoes, peeled and cut into ¾-inch cubes
- 1 cup coarsely chopped yellow onion
- 1 cup coarsely chopped red bell pepper
- 1 cup coarsely chopped yellow bell pepper
- 2 teaspoons kosher salt
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°.
- On a large rimmed baking sheet, place bacon in a single layer.
- Bake, stirring occasionally, until browned and crispy, 12 to 15 minutes. Remove bacon using a slotted spoon, and let drain on paper towels. Leave oven on.
- On same pan, add potatoes, onion, and bell peppers. Sprinkle with salt, paprika, and Cajun seasoning, stirring to coat.
- Bake, turning occasionally, until tender and lightly browned, 40 to 45 minutes. Stir in bacon and parsley.
