Bananas Foster Baked Rice Pudding
 
Makes 6 to 8 Servings
Ingredients
  • 1 cup Arborio rice
  • ½ cup sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • 3 ½ cups whole milk
  • 1⁄3 cup heavy whipping cream
  • 1 tablespoon dark spiced rum
  • Caramelized Bananas (recipe follows)
Caramelized Bananas
  • 3 tablespoons unsalted butter
  • ¼ cup firmly packed light brown sugar
  • 3 medium bananas, cut crosswise ¼ inch thick
Instructions
  1. Preheat oven to 350°. Lightly spray a 2-quart baking dish with cooking spray.
  2. In a medium bowl, stir together rice, sugar, salt, and cinnamon. Stir in milk, cream, and rum. Pour mixture into prepared pan.
  3. Bake for 30 minutes. Gently stir with a wooden spoon, breaking up the skin that has formed on top. Bake until rice is tender, most of liquid is absorbed, and a skin has formed on top of pudding, 45 to 50 minutes more. Let cool for 10 minutes. Serve warm with Caramelized Bananas.
Caramelized Bananas
  1. In a medium skillet, melt butter over medium heat. Add brown sugar, stirring until combined. Cook, stirring frequently, until sugar is melted. Turn off heat, and add bananas. Gently stir until bananas are coated. Serve immediately.
