Grilled oysters, bathed in a decadent swamp butter infused with garlic, herbs, and spices, are a Louisiana delicacy you won’t soon forget.
Grilled Oysters with Swamp Butter
Makes 12
Ingredients
- ½ cup unsalted butter, softened
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon finely chopped green onion
- 2 teaspoons finely chopped anchovies
- 1 teaspoon lemon zest
- 1 teaspoon minced garlic
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 12 oysters on half shell
- Lemon wedges and French bread, to serve
- Garnish: crushed red pepper
Instructions
- Heat a cast-iron grill pan over medium-high heat, or preheat grill to medium-high heat (350° to 400°).
- In a small bowl, combine butter, parsley, green onion, anchovies, lemon zest, garlic, salt, and black pepper. Spoon over oysters. Add oysters to pan or grill, and cook until butter mixture is bubbling and golden brown, 7 to 10 minutes. Serve with any remaining butter mixture, lemon wedges, and bread. Garnish with crushed red pepper, if desired.
