Cajun Deviled Eggs

Ingredients
- 12 large hard-cooked eggs, peeled
- ½ cup mayonnaise
- 1 tablespoon chopped fresh dill
- 1 tablespoon thinly sliced green onion
- 1 tablespoon roughly chopped capers
- 1 tablespoon Creole mustard
- ½ teaspoon kosher salt
- ½ teaspoon hot sauce
- ¼ teaspoon ground black pepper
- Garnish: fresh dill, capers, Cajun seasoning
Instructions
- Halve eggs lengthwise, and place yolks in a medium bowl. Cover egg whites, and keep cool until ready to use.
- Mash yolks with a fork. Add mayonnaise, dill, green onion, capers, mustard, salt, hot sauce, and pepper. Using a rubber spatula, stir until well combined. Transfer to a resealable plastic bag, and keep cold until ready to use.
- Cut an opening in one corner of the yolk mixture bag, and pipe mixture into egg whites. Garnish with dill, capers, and Cajun seasoning, if desired.
