Cajun Deviled Eggs

Cajun Deviled Eggs

Ingredients
  • 12 large hard-cooked eggs, peeled
  • ½ cup mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon thinly sliced green onion
  • 1 tablespoon roughly chopped capers
  • 1 tablespoon Creole mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon hot sauce
  • ¼ teaspoon ground black pepper
  • Garnish: fresh dill, capers, Cajun seasoning
Instructions
  1. Halve eggs lengthwise, and place yolks in a medium bowl. Cover egg whites, and keep cool until ready to use.
  2. Mash yolks with a fork. Add mayonnaise, dill, green onion, capers, mustard, salt, hot sauce, and pepper. Using a rubber spatula, stir until well combined. Transfer to a resealable plastic bag, and keep cold until ready to use.
  3. Cut an opening in one corner of the yolk mixture bag, and pipe mixture into egg whites. Garnish with dill, capers, and Cajun seasoning, if desired.
