Brown Sugar-Pecan Chewies
Makes 12
Ingredients
- 2 cups firmly packed dark brown sugar
- 1 cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 2 large eggs, room temperature
- 2½ cups self-rising flour
- 1½ cups chopped pecans, divided
Instructions
- Preheat oven to 350°. Spray a 13x9-inch baking pan with baking spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
- In a medium bowl, beat brown sugar, melted butter, and vanilla with a mixer at medium speed until fluffy, 1 to 2 minutes, stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition.
- In another medium bowl, whisk together flour and 1 cup pecans. Fold flour mixture into sugar mixture just until combined. Spoon batter into prepared pan, and spread with a small offset spatula. Sprinkle remaining ½ cup pecans on top of batter, and press pecans into batter slightly.
- Bake until golden brown and a wooden pick inserted in center comes out clean, 25 to 30 minutes. Let cool completely in pan on a wire rack.
- Using excess parchment as handles, remove from pan. Trim edges; cut into bars.
