Succulent grilled crawfish burgers, bursting with Cajun flavor and topped with a zesty lemon sauce, are a true taste of Louisiana.
Grilled Crawfish Burgers with Lemon Sauce

Ingredients
- ½ cup mayonnaise
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 tablespoon water
- ¼ teaspoon kosher salt
- 1 (12-ounce) package cooked crawfish tails, drained and chopped
- 1 cup crushed buttery round crackers
- ¼ cup sliced green onion
- 1 large egg
- 1 tablespoon heavy whipping cream
- 1 teaspoon seafood boil seasoning
- 6 (1-inch-thick) slices French bread
- Sliced tomato, shredded lettuce, potato chips, and hot sauce, to serve
Instructions
- In a small bowl, combine mayonnaise, lemon zest and juice, 1 tablespoon water, and salt.
- In a large bowl, stir together crawfish, crushed crackers, green onion, egg, cream, and seafood boil seasoning until well combined. Let stand for 10 minutes. Divide mixture into 6 portions (about ½ cup each), and flatten into patties. Lightly spray patties with cooking spray.
- Heat a cast-iron grill pan over medium heat, or preheat grill to medium heat (300° to 350°). Add bread; cook until grill marks form, about 2 minutes per side. Remove from pan or grill.
- Lightly spray grill pan or grill with nonflammable cooking spray or brush with olive oil. Add crawfish patties, and cook, turning occasionally, until golden brown and an instant-read thermometer inserted in center registers 165°, about 3 minutes per side. Serve on French bread with tomato, lettuce, mayonnaise mixture, chips, and hot sauce.
