Grilled Crawfish Burgers with Lemon Sauce

Succulent grilled crawfish burgers, bursting with Cajun flavor and topped with a zesty lemon sauce, are a true taste of Louisiana.

Ingredients
  • ½ cup mayonnaise
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon water
  • ¼ teaspoon kosher salt
  • 1 (12-ounce) package cooked crawfish tails, drained and chopped
  • 1 cup crushed buttery round crackers
  • ¼ cup sliced green onion
  • 1 large egg
  • 1 tablespoon heavy whipping cream
  • 1 teaspoon seafood boil seasoning
  • 6 (1-inch-thick) slices French bread
  • Sliced tomato, shredded lettuce, potato chips, and hot sauce, to serve
Instructions
  1. In a small bowl, combine mayonnaise, lemon zest and juice, 1 tablespoon water, and salt.
  2. In a large bowl, stir together crawfish, crushed crackers, green onion, egg, cream, and seafood boil seasoning until well combined. Let stand for 10 minutes. Divide mixture into 6 portions (about ½ cup each), and flatten into patties. Lightly spray patties with cooking spray.
  3. Heat a cast-iron grill pan over medium heat, or preheat grill to medium heat (300° to 350°). Add bread; cook until grill marks form, about 2 minutes per side. Remove from pan or grill.
  4. Lightly spray grill pan or grill with nonflammable cooking spray or brush with olive oil. Add crawfish patties, and cook, turning occasionally, until golden brown and an instant-read thermometer inserted in center registers 165°, about 3 minutes per side. Serve on French bread with tomato, lettuce, mayonnaise mixture, chips, and hot sauce.
