Cajun Creamed Spinach

A skillet full of greens will hit the spot.

Cajun Creamed Spinach
 
Ingredients
  • 3 tablespoons unsalted butter, divided
  • ¼ cup panko (Japanese bread crumbs)
  • ¼ teaspoon kosher salt
  • 1 shallot, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 tablespoon all-purpose flour
  • ½ cup whole milk
  • ½ cup heavy whipping cream
  • ¼ cup garlic and herbs cheese
  • ½ teaspoon Cajun seasoning
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon crushed red pepper
  • 16 ounces fresh baby spinach, roughly chopped
Instructions
  1. In a large skillet, melt 1 tablespoon butter over medium heat. Stir in bread crumbs and salt until combined. Cook, stirring frequently, until golden brown, 3 to 4 minutes. Transfer to a bowl, and wipe skillet clean.
  2. In same skillet, melt remaining 2 tablespoons butter over medium heat. Add shallot and garlic; cook, stirring occasionally, until softened and lightly caramelized, 5 to 7 minutes. Stir in flour, and cook, stirring frequently, until lightly toasted, about 1 minute. Gradually add milk and cream, whisking constantly until fully combined and smooth. Stir in garlic and herbs cheese, Cajun seasoning, black pepper, nutmeg, and red pepper. Cook, stirring frequently, until thickened and bubbly, 3 to 5 minutes.
  3. Gradually fold in spinach, and cook, stirring occasionally, until wilted and brightened in color, about 8 minutes. Sprinkle with toasted bread crumbs.
