Chef Jean-Paul Bourgeois - Louisiana Cookin'

Growing up in south Louisiana afforded me certain traditions that many folks would consider to be not just unique but a luxury. By “luxury,” I don’t mean monetarily expensive or lavish but luxury in the small, everyday moments, which, as a young man, I often overlooked and took for granted. Hunting, fishing, trapping, and foraging often worked their way into my life through the homemade meals that graced our family’s dinner table on almost a nightly basis.

Indulge in this tantalizing Louisiana dish that utilizes one of our favorite ingredients: duck! While we used farm-raised duck in this recipe, Chef Jean-Paul enjoys duck hunting and wild duck makes for an incredible addition. This duck is plated with apples and herbs.

Dad’s Duck Dinner

Many of the most beloved Louisiana dishes may begin with a roux but if you want to take your favorite recipes from good to great, a homemade chicken stock is the way to go.

In South Louisiana, sauce piquante is a smothered rice dish featuring a tangy, spicy sauce. Versatile as it is bold, Chef Jean-Paul Bourgeois’ Rabbit Sauce Piquante is perfect with nearly any protein (including seafood)!

Rabbit Sauce Piquante

New Orleans-Style BBQ Shrimp is a delicious celebration of Louisiana’s culinary heritage, featuring delicate, slightly sweet shrimp bathed in a buttery, kicked-up sauce infused with garlic, Worcestershire sauce, Cajun seasoning, and a hint of hot sauce.
