Did you always have the idea of Heron alongside creating Mae & Co.? Absolutely. It was intentional that we built them this way. It was a large restaurant space, and so I wanted to use the overall space to reflect both sides of my journey and what I love about food. Heron really came from my journey as a chef and not just a cook, if that makes sense. I mean, that was more about refining and trying to find my own technique. So, you know, the building blocks were there, but Heron’s been a lot more about my career and my perspective on food and how I’ve fine-tuned that as a chef and as I’ve grown.
What’s your favorite local bite? I love the Ćevapčići from Julie Anne’s Bakery & Café. It’s the national sandwich of Bosnia, and this is a family of folks that left Bosnia and Herzegovina during the ’90s. The family—extremely gracious, awesome people—bought this very traditional bakery that does king cakes and cookies and pies and cheesecakes, but they started adding some of their traditional dishes to the menu. This sandwich is just amazing.
What has the community support been like? Over the last year, it’s been incredible to watch people begin to understand what I wanted them to see and what I wanted them to taste and experience. So, we’ve been really happy with how the community has responded to what our vision is for not just the food but [also] the experience of eating in both restaurants.
