Ingredients
- ¼ cup lemon zest (about 8 lemons)
- 2 cups kosher salt
- ¼ cup cayenne pepper
- 6 dried bay leaves, crumbled
- 2 tablespoons garlic powder
- 2 tablespoons paprika
- 1 tablespoon onion powder
- 1 tablespoon crushed red pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dry mustard
- 1 tablespoon dried dill weed
Instructions
- Preheat oven to 350°.
- On a rimmed baking sheet, spread lemon zest.
- Bake until dried, 3 to 5 minutes, stirring halfway through baking. Let cool.
- In a medium bowl, stir together lemon zest, salt, and all remaining ingredients until combined.
Notes
SERVING INSTRUCTIONS: In a large stockpot, combine 4 quarts water, ½ cup Crawfish Boil Seasoning, and 4 lemon halves. Bring to a boil. Add 5 to 6 pounds live crawfish, and gently stir. Cook for about 5 minutes. Remove from heat, and let stand for 5 minutes. Drain, and serve immediately.
