Fried Shrimp Po’ Boys
- 3 large eggs
- 3 tablespoons hot sauce*
- 2 tablespoons whole milk
- 2 pounds extra-large fresh shrimp, peeled and deveined
- Vegetable oil, for frying
- 3 cups all-purpose flour
- 1 tablespoon Cajun seasoning
- 1½ teaspoons kosher salt
- Spicy Mayonnaise (recipe follows)
- 4 (6- to 8-inch) portions soft French bread, split lengthwise
- Shredded iceberg lettuce, sliced tomatoes, and pickle slices, to serve
- In a medium bowl, whisk together eggs, hot sauce, and milk. Add shrimp; refrigerate for 30 minutes.
- In a 12-inch cast-iron skillet, pour oil to a depth of ½ inch, and heat over medium heat until an instant-read thermometer registers 350°. Line a baking sheet with paper towels.
- In a shallow pan, whisk together flour, Cajun seasoning, and salt.
- Remove shrimp from egg mixture, letting excess drip off. Dredge in flour mixture to completely coat. Let stand for 10 minutes.
- Fry shrimp, turning occasionally, until golden brown, 2 to 3 minutes. (Let oil return to 350° between batches.) Remove from oil using a slotted spoon, and let drain on prepared pan.
- In a large bowl, toss together fried shrimp and ½ cup Spicy Mayonnaise.
- Spread remaining Spicy Mayonnaise onto cut sides of each portion of bread. Top with lettuce, tomato, pickles, and fried shrimp.
