Apple Fritters
 
Makes 4 to 6 servings
Ingredients
  • 2 tart apples, peeled, cored, and sliced crosswise into ¼-inch rings
  • 1 tablespoon brandy, divided
  • 2 teaspoons fresh lemon juice
  • 1 large egg
  • 1 tablespoon granulated sugar
  • ½ teaspoon grated lemon zest
  • ¼ cup buttermilk, room temperature (plus 1 to 2 teaspoons as needed)
  • 1 teaspoon butter, melted and cooled
  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar, for dusting
Instructions
  1. In a large bowl, toss the apples with half of the brandy and the lemon juice. Let stand for 1 hour.
  2. For the batter, whisk egg, granulated sugar, and lemon zest in a small mixing bowl until it is light in color and forms a ribbon when trailed from the whisk. Beat in the rest of the brandy, buttermilk, and butter. Sift in the flour with baking soda and salt. Fold until combined. If the batter is too thick, add 1 or 2 teaspoons more buttermilk.
  3. Heat about 2 inches of oil in a deep fryer or frying pan to about 360°.
  4. Drain the apple slices and pat dry. Dip the apple slices, 1 or 2 at a time, into the batter to coat evenly. Let excess batter drip back into the bowl. Carefully place apple slices into the hot oil, and fry until the bottom of each slice is golden brown and the coating has puffed. Carefully turn the slices and fry until golden brown. Let drain on paper towels, and dust with powdered sugar.
