Red Snapper in Quick Tomato Sauce
- 2 tablespoons unsalted butter
- 1 onion, finely chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 large tomatoes, chopped
- 2 tablespoons tomato paste concentrate
- 1½ cups vegetable broth
- 3 tablespoons capers
- 1 tablespoon Cajun seasoning
- ½ teaspoon lemon zest
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 4 (6-ounce) red snapper fillets
- Lemon wedges, to serve
- Garnish: chopped fresh parsley
- In a medium skillet, melt butter over medium-high heat. Add onion and bell pepper, and cook, stirring frequently, until tender, about 8 minutes. Add garlic, and cook, stirring constantly, for 1 minute. Add tomatoes and tomato paste, and cook, stirring frequently, for 3 minutes. Add broth, and cook, stirring occasionally, until thickened and reduced, about 8 minutes. Stir in capers, Cajun seasoning, and lemon zest. Keep warm.
- In a large skillet, heat oil over medium-high heat.
- Sprinkle salt and black pepper onto fish. Add to skillet, and cook until fish flakes easily with a fork, 2 to 3 minutes per side. Serve fish over tomato sauce with lemon wedges. Garnish with parsley, if desired.
