Red Snapper in Quick Tomato Sauce
 
Makes 4 servings
Ingredients
  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 2 tablespoons tomato paste concentrate
  • 1½ cups vegetable broth
  • 3 tablespoons capers
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon lemon zest
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 4 (6-ounce) red snapper fillets
  • Lemon wedges, to serve
  • Garnish: chopped fresh parsley
Instructions
  1. In a medium skillet, melt butter over medium-high heat. Add onion and bell pepper, and cook, stirring frequently, until tender, about 8 minutes. Add garlic, and cook, stirring constantly, for 1 minute. Add tomatoes and tomato paste, and cook, stirring frequently, for 3 minutes. Add broth, and cook, stirring occasionally, until thickened and reduced, about 8 minutes. Stir in capers, Cajun seasoning, and lemon zest. Keep warm.
  2. In a large skillet, heat oil over medium-high heat.
  3. Sprinkle salt and black pepper onto fish. Add to skillet, and cook until fish flakes easily with a fork, 2 to 3 minutes per side. Serve fish over tomato sauce with lemon wedges. Garnish with parsley, if desired.
