Brown Gravy
 
Makes about 2¾ cups
Ingredients
  • ½ cup unsalted butter
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped green bell pepper
  • 1 clove garlic, minced
  • ½ cup browned flour (reserved from Crawfish Mac and Cheese)
  • 2 cups chicken broth
  • 2 teaspoons Creole seasoning
Instructions
  1. In a medium saucepan, melt butter over medium heat. Add onion, celery, bell pepper, and garlic. Cook, stirring constantly, until tender, about 8 minutes.
  2. Sprinkle browned flour onto vegetable mixture, and cook, stirring frequently, until flour is not dry. Whisk in broth until smooth. Cook, stirring frequently, until thickened and bubbling, 6 to 8 minutes. Stir in Creole seasoning.
