Air Fryer Creole Shrimp Dinner
 
Makes 6 servings
Ingredients
  • 1 (16-ounce) package andouille sausage, sliced crosswise ½ inch thick
  • 1½ cups small broccoli florets
  • 1½ cups ½-inch-sliced half-moon yellow squash (about 1 squash)
  • 1½ cups 1-inch-chopped orange bell pepper (about 1 bell pepper)
  • 1 tablespoon minced garlic
  • 2 tablespoons vegetable oil, divided
  • 2 teaspoons Creole seasoning, divided
  • 1½ pounds fresh jumbo shrimp, peeled and deveined and patted dry
  • Garnish: chopped fresh parsley
Instructions
  1. If preheating is recommended by your air fryer manual, preheat fryer to 375°.
  2. Place andouille in air fryer basket. Set temperature to 375°, and cook until crispy, about 12 minutes. Set aside, and keep warm.
  3. In a large bowl, toss together broccoli, squash, bell pepper, garlic, 1 tablespoon oil, and 1 teaspoon Creole seasoning.
  4. Place half of broccoli mixture in air fryer basket. Set temperature to 375°, and cook for 6 minutes. Repeat with remaining broccoli mixture. Add to andouille.
  5. In a large bowl, toss together shrimp, remaining 1 tablespoon oil, and remaining 1 teaspoon Creole seasoning.
  6. Place half of shrimp in air fryer basket. Set temperature to 375°, and cook until pink and firm, 6 to 7 minutes. Repeat with remaining shrimp. Toss with andouille mixture, and garnish with parsley, if desired. Serve warm.
