Honeydew Cordial
- ½ honeydew melon, peeled and chopped
- ½ cup sugar
- Press melon pieces through a masticating juicer, and fine-strain the juice with a tea strainer or chinoise. (Alternatively, in the work bowl of a food processor or the container of a blender, process melon pieces until smooth; strain thoroughly). Measure 1 cup juice in a liquid-measuring cup. Use any remaining juice for another use.)
- Add sugar to a 1-pint Mason jar, and add juice; cover and shake until sugar dissolves. Use immediately, or refrigerate up to 5 days.
