Peach Fritters
- 1⅔ cups self-rising flour
- ¾ cup sugar, divided
- 1 teaspoon ground cinnamon, divided
- ¼ teaspoon ground nutmeg
- ½ cup whole buttermilk
- 1 large egg
- 2 tablespoons vegetable oil, plus more for frying
- ½ teaspoon vanilla extract
- 2 cups chopped fresh peaches
- Line a large baking sheet with paper towels.
- In a large bowl, whisk together flour, ¼ cup sugar, ½ teaspoon cinnamon, and nutmeg. Make a well in center. Add buttermilk, egg, oil, and vanilla; stir until moistened. Stir in peaches.
- In a large Dutch oven, pour oil to a depth of 2 inches, and heat over medium heat until a deep-fry thermometer registers 350°.
- Working in batches, using a 1½-tablespoon spring-loaded scoop, carefully drop batter into hot oil. Fry, turning occasionally, until golden brown and cooked through center, 3 to 4 minutes. Remove from oil using a slotted spoon, and let drain on prepared pan.
- In another large bowl, whisk together remaining ½ cup sugar and remaining ½ teaspoon cinnamon. Toss warm fritters in sugar mixture. Serve warm.
