Hamburger Steaks with Mushroom Gravy
 
Makes 4 Servings
Ingredients
  • 1½ pounds ground beef (80/20)
  • 2 Spanish onions, small dice, divided
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • ½ teaspoon ground black pepper, plus more to taste
  • Pinch salt, plus more to taste
  • 2 tablespoons peanut oil
  • ½ cup unsalted butter, plus more if needed
  • 1 pound fresh cremini mushrooms, sliced
  • 1 tablespoon minced garlic
  • 8 fresh sage leaves, julienned
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable or mushroom stock, room temperature
  • 16 sprigs fresh thyme, tied in a bundle
  • Hot cooked white rice, to serve
  • Garnish: chopped fresh parsley
Instructions
  1. In a medium bowl, combine beef, half of onion, Worcestershire, soy sauce, and pepper. Divide mixture into 4 portions, and shape each portion into a 1-inch-thick patty. Season to taste with salt and pepper on both sides, and set aside.
  2. Heat a 12-inch cast-iron skillet over high heat until just smoking, about 5 minutes. Add oil, and swirl pan to coat. Add patties, pressing down gently, and cook for 4 minutes. Using a metal spatula, loosen patties from pan, and shake pan to recoat with oil; cook 3 to 4 minutes. Remove from skillet.
  3. In the same skillet, melt ¼ cup butter over high heat. Add mushrooms, and cook, stirring occasionally, until golden and pan looks dry. Add remaining onion, garlic, sage, and a pinch of salt and ground black pepper, and cook, stirring constantly, until onion is translucent. If pan feels dry, add a tablespoon of butter. Cook for 1 minute more. Reduce heat to medium, add flour, and stir to combine. Increase heat to high, and slowly add stock, stirring to incorporate; bring to a rapid simmer, stirring frequently. Add thyme and taste, adjusting salt and pepper, if necessary.
  4. Reduce heat to medium-low. Add patties and accumulated juices to gravy. Spoon gravy over patties, and simmer, occasionally spooning gravy over patties, until patties are medium-well, 10 to 15 minutes. Discard thyme bundle, serve with rice, and garnish with parsley, if desired.
