Raw Oysters with Chile-Lime Mignonette Sauce
- 1 shallot, minced (about ¼ cup)
- ¼ cup Champagne vinegar
- 2 teaspoons lime zest
- 1 tablespoon fresh lime juice
- 1 teaspoon Cajun seasoning
- ¼ teaspoon crushed red pepper
- 12 cold shucked fresh oysters
- Garnish: lime zest
- In a medium bowl, combine shallot, vinegar, lime zest and juice, Cajun seasoning, and red pepper. Serve with oysters. Garnish with lime zest, if desired.
Oysters can be served in the natural shell or ceramic shells.
