Garlic Purée
 
Ingredients
  • 4 ounces garlic cloves (about 3 small heads garlic)
  • 2 cups whole milk, plus more if needed
Instructions
  1. In a small saucepan, bring garlic and water to cover to a boil over medium heat. Drain water and refill pan with cold water. Repeat procedure twice.
  2. Add milk to garlic, and cook over medium heat until garlic is cooked through and completely soft, about 20 minutes. Strain garlic through a fine-mesh sieve. Transfer to the container of a blender, and purée until smooth. Add milk, 1 tablespoon at a time, if mixture is too thick.
