Roasted Sweet Potatoes
 
Ingredients
  • 2 pounds sweet potatoes, chopped
  • 2 tablespoons rendered duck fat or olive oil
  • 1 teaspoon kosher salt
Instructions
  1. Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, toss together all ingredients until well coated. Arrange in an even layer on prepared pan.
  3. Bake until golden brown and crisp, 15 to 20 minutes.
