Grilled Red Onion Dip
- 1 red onion, sliced 1 inch thick
- 1 tablespoon vegetable oil
- 1 cup sour cream
- 2 tablespoons chopped fresh dill
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- Grilled sweet onion, grilled green tomatoes, crackers, and bruschetta toast, to serve
- Garnish: fresh dill, lemon zest
- Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
- Brush red onion with oil. Grill red onion, covered with grill lid, for 5 to 8 minutes per side. Let cool. Chop, and set aside.
- In a medium bowl, stir together red onion, sour cream, dill, lemon zest, salt, and pepper. Refrigerate for 2 hours. Serve with sweet onion, green tomatoes, crackers, and bruschetta toast. Garnish with dill and lemon zest, if desired.
