Grilled Red Onion Dip
 
Makes about 1½ Cups
Ingredients
  • 1 red onion, sliced 1 inch thick
  • 1 tablespoon vegetable oil
  • 1 cup sour cream
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • Grilled sweet onion, grilled green tomatoes, crackers, and bruschetta toast, to serve
  • Garnish: fresh dill, lemon zest
Instructions
  1. Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
  2. Brush red onion with oil. Grill red onion, covered with grill lid, for 5 to 8 minutes per side. Let cool. Chop, and set aside.
  3. In a medium bowl, stir together red onion, sour cream, dill, lemon zest, salt, and pepper. Refrigerate for 2 hours. Serve with sweet onion, green tomatoes, crackers, and bruschetta toast. Garnish with dill and lemon zest, if desired.
