Bananas Foster Bread Pudding
 
Ingredients
  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • ¾ teaspoon plus a pinch kosher salt, divided
  • 1 cup white chocolate chips
  • 6 large egg yolks
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 (12-ounce) container Hawaiian rolls, cubed
  • 7 cups cubed croissants (about 10 ounces)
  • ¼ cup unsalted butter, plus more for greasing pan
  • ¼ cup firmly packed light brown sugar
  • 3 ripe slightly browned bananas, sliced
  • ¼ cup dark rum
  • ¼ ounces banana liqueur*
  • Garnish: confectioners’ sugar
Instructions
  1. In a saucepan, whisk together cream, milk, granulated sugar, and ½ teaspoon salt. Heat over medium-high heat just until bubbles form around edges of pan. (Do not boil.) Turn off heat, and add white chocolate chips. Whisk until smooth. Set aside.
  2. In a large bowl, whisk together egg yolks, eggs, and vanilla until pale yellow. Slowly add warm cream mixture and a pinch of salt, whisking until combined.
  3. Generously grease a 13x9-inch baking dish with butter, and add a layer of roll and croissant cubes.
  4. Add remaining bread to warm cream mixture, and gently stir until combined. Pour into prepared pan, and spread into an even layer. Let stand until cool; cover and refrigerate overnight.
  5. Preheat oven to 300°.
  6. Bake until center is firm and top is browned, about 1 hour and 15 minutes.
  7. Meanwhile, in a large saucepan, melt butter over medium heat. Add brown sugar and remaining ¼ teaspoon salt. Reduce heat, and cook, stirring constantly, until sugar dissolves and mixture is bubbly, about 2 minutes. Add bananas, and cook for 2 to 3 minutes. Add ¼ cup rum and liqueur, and flambé, if desired. Once the flames have died down, turn off heat, and mash bananas just a bit until they are chunky. Set aside. (If you choose not to flambé the mixture, cook for 2 to 3 minutes longer.)
  8. Serve bread pudding with banana mixture. Garnish with confectioners’ sugar, if desired.
