1 teaspoon Spiced Simple Syrup (recipe follows), or more to taste
1½ ounces aged rum
2 dashes bitters
Garnish: maraschino cherry
SPICED SIMPLE SYRUP
1 cup sugar
1 cup water
½ teaspoon whole cloves
½ teaspoon black peppercorns
1 vanilla bean
1 star anise pod
1 cinnamon stick
Instructions
In an old-fashioned glass, muddle rind in Spiced Simple Syrup. Add rum and bitters; stir well. Add ice. Garnish with a cherry, if desired.
SPICED SIMPLE SYRUP
In a small saucepan, bring sugar and 1 cup water to a boil over medium-high heat, stirring occasionally, until sugar is dissolved. Add cloves and all remaining ingredients; reduce heat to low. Cover and simmer for 30 minutes. Strain mixture through a fine-mesh sieve, discarding solids. Refrigerate in an airtight container.
